1-octen-3-ol is also called mushroom alcohol. The molecular formula is C8H16O and the structural formula is CH2=CH2=CHCH(OH)CH2CH2CH2CH2CH3. It is an aliphatic unsaturated alcohol. It looks like a colorless to light yellow oily liquid. It has aromas of mushrooms, lavender, roses and dried herbs. In nature, it is found mainly in mint, thyme and fresh mushrooms. It is a natural equivalent fragrance. It is insoluble in water and soluble in organic solvents such as ethanol. In industry, 1-octen-3-ol is obtained by synthesis rather than isolation from natural substances. The main purpose is to regulate fragrances and pharmaceutical ingredients.
