Trans-2-hexenol is a volatile component of tea and was detected in tea in 1966. It is a colorless liquid, slightly soluble in water, soluble in organic solvents such as ethanol, boiling point 155℃, relative density 0.8498 (16/4℃), refractive index 1.4367 (20℃), and has a strong grassy smell. It is present in fresh tea leaves and finished tea. The content of tea leaves increases sharply during the wilting period and then decreases with fermentation and drying.
Used to formulate edible flavors of apples, strawberries, oranges, vegetables, tea, kiwi, tomatoes, bananas, mint, pears, berries, etc. The concentration in the final flavored food is about 0.63~4.1mg/kg. China GB 2760-1996 is approved as a permitted edible flavor.
It is prepared by selective hydrogenation of isopropylidene acetone in the presence of copper catalyst and distillation separation.
